Mathias Dahlgren is a chef and restaurant owner.
He has won numerous gastronomic awards over the years, among other things he is the only Swede to win the “chef world cup” Bocuse d’Or.
Mathias’ philosophy leans back on the Swedish identity, natural ingredients and natural flavors, with elements of both local and global influences. He is good at creating exclusive environments with a comfortable and friendly atmosphere, several of Mathias’ restaurants have been awarded Michelin stars.
Mathias runs the restaurants Matbaren and Rutabaga at the Grand Hotel in Stockholm. Sparrow Bistro and Winebar at the Sparrow Hotel in Stockholm. Green Rabbit Bakery in Stockholm and Overseas by Mathias Dahlgren in the Maldives.
Why do we need to transform the food system?
“Change is a decisive issue for human life & well-being. The earth is doing just fine without us, while we need the earth.
I am sceptical of overarching global solutions, each place must probably base solutions on what is wisest for that particular place. Different places have different conditions and it is generally unwise to eat too unilaterally regardless of the place. It is central to try to find a healthy balance between benefit, pleasure and impression. However good a new solution is for the planet, it will never change our behaviour, if it is not attractive to eat in terms of sight, smell, temperature, texture and taste.”
