Florencia is a cookbook author and recognized chef. She grew up in Argentina and has worked in kitchens all over the world, giving her a wide variety of experiences in cooking and a strong love for good ingredients.
Today, Florencia is the head chef at Ekstedt, known for its unique concept of cooking over wood-burning stoves and ovens. To prepare food over fire is one of Florencia’s great passions, she has released a book about wood-fire cooking, as an art of cooking but which also touches on it as a ritual and a way of gathering together people around food and cooking.
Why do we need to transform the food system?
”It is very important to have a sustainable food system, because everything that we consume and produce on a large or small scale changes our lifestyle and health in the long term. For example, if you eat cell modified vegetables or animal protein that has been treated with a lot of medicine.
Large-scale production in other countries also affects us, so it is important that the message goes out everywhere and that everyone leads by example. Sometimes when certain products are marketed as sustainable, for example soy, which contaminates more than Swedish products, then it can be difficult as a consumer to decide what to put on the plate.”
